1 box Spice Cake mix (I used Betty Crocker Super Moist--the cake mix that is used will impact the point value!)
1 can pumpkin (or 1 3/4 C)
2 egg whites
1/2 C water
Mix all together. Bake according to box of cake mix.
(I would recommend not using cupcake liners, but spraying pam in the muffin tin to avoid stickage.)
24 muffins = 2 pts. per muffin!!

I am going to make these too. I dont like pumpkin flavor but Jesse does and I think he'll love them!
ReplyDeleteLouie doesn't like pumpkin either!! I will have him take a bite and see if he can taste it--because I don't think I can. I hope Jesse likes them!!
